DEHYDRATORS:
Dehydrators gently dry food out as opposed to cooking it (which destroys food's enzymes). Dehydration results in a crunchier and crispier version of the food, and produces heated dishes for consumption.
Excalibur Dehydrator
The dehydrator is the raw fooder's oven and the Excalibur dehydrator is the dehydrator of choice. Unlike other brands that use a heating element which relies on heat rising up through the unit (heating foods faster on the bottom) the Excalibur generates warm air from a fan at the rear which distributes the air evenly throughout the unit. The temperature shown on the thermostat dial of an Excalibur is actually the temperature of the food and NOT the air (which is up to 20 deg F higher and what is affecting it)
"Living foods" are the basis of the raw food diet, and in order to be 'alive' the food's enzymes must remain intact. Cooking food above 118 degrees F destroys all the food's enzymes. The dehydrator versus an oven is a much more effective way of preparing raw food dishes.
